Green Ginger Gel Drops (Vegan)

Serves: 4 portions
Matcha is green tea powder that has antiviral properties that can help decrease viral replication and decrease cancer growth. It contains powerful antioxidants like ECGC and catechins that help fight free radicals that can damage cells and DNA. Matcha also helps improve mood and concentration, can boost metabolism and calorie burn, lowers cholesterol and blood sugar and is rich in fiber, chlorophyll and vitamins. Paired with anti-inflammatory ginger and soothing honey and lemon, these gel drops are comforting to pop into the mouth one cube at a time and then let them calm your mood and your throat on the way down. So, if you feel a cold or virus coming on whip up a batch of these Green Ginger Gel Drops and keep them close at hand.
Ingredients
- 1.5 cups Hot water
- 2 Tbls. Agar-Agar flakes (or) 2 tsp. Agar-Agar powder. Edan Foods Hand Harvested Agar-agar flakes
- 4 tsp. Matcha powder
- 1 Tbls. Ginger root, finely chopped or minced
- 3 Tbls. Honey, raw unfiltered Madhava Organic Very Raw Honey, 10.5 oz. jar
- ¼ cup Lemon juice
Instructions
- Add hot water to a small saucepot. Do not turn on the heat but rather sprinkle the agar-agar over the surface of the water. Let agar rest in the hot water for about 5-10 minutes to soften. After the agar has softened turn the heat on under the saucepot and bring the agar/water mixture to a boil then reduce heat to a slow boil or fast simmer for 10-15 minutes, (or) if using agar powder the simmering time can be reduced to 5 minutes.
- Meanwhile, in a separate mixing bowl stir together the matcha, lemon juice, ginger root and honey.
- Pour the hot agar/water into the bowl with the matcha powder mixture and stir to blend. Pour the mixture into an ungreased 8 x 8 inch baking pan and refrigerate uncovered and undisturbed until fully cooled. The agar will gel the mixture as it cools down to room temperature or colder but it is important to not stir or jumble he mixture again as it is cooling and before it has firmly set.
- Once the gel has solidified it can be cut into bite size cubes and served.
